Kumari's Kerala Style  Carrot & Beans Thoran

Ingredients

  • Carrot & beans – 250 gm, each
  • Grated coconut – 1/2 cup
  • Green chilly – 4
  • Small onion – 5
  • Garlic – a small piece
  • Turmeric powder – 1/4 tsp
  • Jeera (cumin) – a small pinch (optional)
  • Salt
  • Mustard – 1/2 tsp
  • Curry leaves
  • Coconut oil

Directions

  1. Cut the beans finely and grate the carrots

  2. Combine number 2 ingredients and mix it well using your hands

  3. Heat oil in a pan and splutter mustard seeds

  4. Add curry leaves & the coconut mixture

  5. Fry it for 2-3 minutes (do not make the coconut brown)

  6. Add the sliced beans, grated carrots & salt, Combine everything well

  7. Sprinkle around 1 tbsp water & cover and cook it on low flame till its done

  8. This should be ready in 5-10  mins, approx
